It’s Sunday!  This is the day I spend prepping food for the week, laundry and budgeting.

Breakfast: Wheat toast with almond butter/coffee

AM Snack: None

Lunch: Vietnamese Pork Sandwich with veggies / water

PM Snack: handful of cashews / string cheese

Dinner: My sweetie made Caldo (A Mexican Chicken & Veggie Soup). So yummy!

Water: 90 Oz.

My Fitness:
Today’s Exercise: Played in the pool with my kids

Total Exercise Time: 60 minutes

My Rest:
Last Night I went to bed at: 11:30pm  I had trouble getting to sleep: NO

I was able to finally get myself to sleep by: in the dark

I woke up today at: 7:300am  My sleep was interrupted zero times.

I had a total of  8  hours of sleep.

Today I took time to relax at least 10 minutes: YES   Total time relaxed: 120 min

I relaxed by: Watching a movie

Nesting Time: Yes, 30 minutes.

My Mood:

I’m here!  Whew!!  Life is going so fast and this post has been chopped off my list.  I know so many Peeps love keeping up with me and seeing I am just like you.  So here it goes, back on the horse :)

Breakfast: Kid’s breakfast!  Pancakes/bacon/eggs and coffee

AM Snack: None

Lunch: at a Hibachi Grill.  Salad with Ginger dressing / Fried rice / chicken teriyaki / veggies / water


PM Snack:

Dinner: 1/2 chili burger with asparagus & sweet potato chips

Late Snack: Water :)

Water: 90 Oz.

Other Liquid: 1 cup of coffee

Vitamins/Supplements: Multi x 3 / Fish Oil x 2 / Jigsaw Mg x4 / B complex / Vitamin D3 1,000 x 2

Lunch: Leftover Chicken Parmesean with clean sauce & goat cheese / chopped veggies with red vinegar & olive oil/  Water

PM Snack: Grapefruit

Dinner: Chicken Gumbo with okra, tomatoes,onion, bell pepper & brown rice / Tea – unsweet

Late Snack: Water :)

My Feelings and Struggles today were: No struggles.  Felt in control, great day.  Feeling strong.  No stress or anxietyof any kind.  I actually was laughing at myself during Tony Robbin’s new show tonight how I have come so far.  I was on the bead completely relaxed!  We can forget to celebrate the victories.  No matter how small!!

I love the 4th being on Sunday.  This was a great day to kick back and enjoy the day.  I stocked my kitchen full of great food for the next two weeks.  All meals are planned.  Dinner is on auto-pilot.

My Healing Journal for today is:

Breakfast: Warm oatmeal with a little brown sugar / coffee

AM Snack: None

Lunch: Pablano Soup /  Water

PM Snack: None

Dinner: Tomato Soup / Tea

Late Snack: Vanilla Ice Cream

Water: 90 Oz.

Other Liquid: 1cup of coffee

Vitamins/Supplements: Multi x 3 / Fish Oil x 2 / Jigsaw Mg x2 / B complex / Vitamin D3 x 2

My Fitness:

Today’s Exercise: No working out for a few days because of my teeth.  Took a casual walk around my neighborhood

Total Exercise Time: 30 min.

My Rest:
Last Night I went to bed at: 11:30pm  I had trouble getting to sleep: NO

I was able to finally get myself to sleep by: TV with captions

I woke up today at: 7:300am  My sleep was interrupted zero times.

I had a total of  8  hours of sleep.

Happy 4th of July!  We are spending the day as a family and visiting a few friends.

My Healing Journal for today is:

Breakfast: Warm oatmeal with a little brown sugar / coffee

AM Snack: None

Lunch: My husband took me to get mexican (my favorite).  I can’t eat still from having my wisdom teeth removed.  So he ordered Guacamole, refried beans, salsa and Queso.  It tasted so good!/ Water

PM Snack: None

Dinner: Scrambled Eggs / Tea

Late Snack: Vanilla Ice Cream

Water: 90 Oz.

Other Liquid: 1cup of coffee

Vitamins/Supplements: Multi x 3 / Fish Oil x 2 / Jigsaw Mg x2 / B complex / Vitamin D3 x 2

My Fitness:

I promised you daily updates and of course this week was the hardest for me.  I had oral surgery to have wisdom teeth removed on Thursday.  The little bit of fear before hand and the recovery after hasn’t been bad, but I have just felt kinda lazy.  Although maybe that’s not a terrible thing.  I am grateful to have the chance to give my body and mind a rest.  I am fully recharged and back on track.  Picking up with meal planning (although still eating ice cream :) ) and back to working on my Love Dare Project.  Glad to be back in full swing, sorry for the delay.

My Healing Journal for today is:

Lunch: Cream of Broccoli Soup / Water

PM Snack: None

Dinner: Tomato Basil Soup / Tea

My Feelings and Struggles today were: Great, although I never thought I would get sick of ice cream.  How I would love a hamburger.

My new challenge – the book The Love Dare.  This is a 40 day challenge to strengthen your marriage.
Today was day 3 – “To get a gift for my spouse so he knows I was thinking of him”
This challenge was a little harder.  I brought home his favorite cookies from the store.  He had a big smile.

AM Snack: Sting Cheese / 11 almonds

Lunch: We had Chili Dogs with the kids / Water

PM Snack: Granola Bar

Dinner: 15 Bean Soup / Salad with olive oil and balsamic vinegar / water

Late Snack: None

Water: 90 Oz.

Other Liquid: 2cup of coffee

Vitamins/Supplements: Multi x 3 / Fish Oil x 2 / Jigsaw Mg x2 / B complex / Vitamin D3 x 2

My Fitness:

Today’s Exercise: Played Frisbee and ball at the park, we added a little jogging and few exercises while we were there.  Also spent part of the day mowing the lawn and yard work

I was able to finally get myself to sleep by: Dark room

My Feelings and Struggles today were: Today was a great day. Lots accomplished and fun with the kiddos.

My new challenge – the book The Love Dare.  This is a 40 day challenge to strengthen your marriage.
Today was day 2 – “To be kind to my spouse”
This challenge wasn’t too hard.  I am a natural nurturer, so being kind and taking care of him comes pretty naturally. I know these are the easy days. Although it’s when you are really trying to be kind that thing happen to test your patience.

Today was a fun day with friends.  Started out with lunch with one group, visiting a new baby in the hospital and girl’s night with more friends.  Great day to just kick back and enjoy lots of laughter.

My Healing Journal for today is:

Today’s Exercise:  Wii Fit with the kids

My Feelings and Struggles today were: Today was a great day I let myself really enjoy being around friends.

Today was day 1 – “Not to say anything negative to my spouse”
This challenge wasn’t too hard.  I am generally not a complainer, but I did have to watch a few times.  It was a great day.  We seemed to get along really well even with all the scheduling we had today.

Amy’s Easy Chicken Marsala

4 Chicken Breast – I like boneless skinless

1/4 cup All purpose Flour

1 tbsp. Brown Sugar

1 cup Chicken Stock

1 cup Marsala Wine

1 cup Mushrooms

1 Medium Onion

1/2 tsp. Salt

1/2 tsp. Pepper

1/8 Cup of Olive Oil

Mix flour, brown sugar, salt and pepper in a shallow bowl. Place chicken in flour mixture making sure each side is dusted.  Heat olive oil in a skillet – pan saute chicken until golden brown on both sides and fully cooked.  Remove chicken from skillet.  Add a little more olive oil if needed.  Saute onion and mushrooms until soft.  Add Marsala wine and chicken stock, simmer until reduced.  Add chicken back to skillet and simmer for about 5 minutes to meld flavors.  Serve warm.  Enjoy!

**tip: Don’t try to flip chicken too early.  If it doesn’t lift from skillet easily it is not ready.  Should release from pan easily when golden.

Amy’s Daily Healing Journal – Friday, June 4th

It is so hot!  Here in Houston, TX the weather is already 100.  Water bottle and I are even better friends this summer.  Don’t forget to stay hydrated.

My Healing Journal for today is:

Breakfast: 2 Eggs / whole wheat toast / coffee / Magnesium water

AM Snack: Cheese / 11 almonds

Lunch:  2 pieces of thin crust veggie pizza / Water

PM Snack: Rice Cake with Almond Butter

Dinner: Chicken breast with green salsa, sprinkle of cheese/Salad with lots of veggies/Tea

Late Snack:  Magnesium water with Lime

Water: 90 Oz.

Other Liquid: 1 cup of coffee & 1 glass of tea

Vitamins/Supplements:       Multi x 3 / Fish Oil x 2 / Natural Calm Mg x2 / B complex / my Neti Pot

My Fitness:
Today’s Exercise:  Wii Fit with the kids

Total Exercise Time: 30

My Rest:
Last Night I went to bed at: 10:30pm  I had trouble getting to sleep: NO

I was able to finally get myself to sleep by: Dark room

I woke up today at: 6:00am  My sleep was interrupted zero times.

I had a total of  7.5  hours of sleep.

Today I took time to relax at least 10 minutes: YES   Total time relaxed: 30 min

I relaxed by: Reading (Devotionals) & drinking coffee on the porch

Nesting Time: Yes, 45 minutes.
